Hōjicha : Khojicha (ō う じ 茶) is a Japanese green tea. It differs from other Japanese green teas in that it is fried in a porcelain dish on coals, whereas most Japanese teas are steamed. The tea is roasted at a high temperature, changing the color shade of the leaves from green to reddish-brown. The process was first performed in Kyoto, Japan, in the 1920s, and its popularity persists today.

It is sometimes called "popcorn tea", because during the roasting process, several grains of rice float up and resemble popcorn, or as "folk tea". Sugar and starch from rice give the tea a warm, rich nutty taste has a light yellow tint. It is easy to drink and also has a beneficial effect on the stomach.
Rice grains eliminate the sharpness of fresh Japanese tea. It warms pleasantly in cold weather, is perfect for both evening tea drinking and for providing a strong tonic effect. In addition, genmaicha eliminates a strong appetite.
Although this tea is based on green tea, the recommended way to brew this tea is different: the water should be about 80-85 ° C (176-185 ° F), and a cooking time of 3-5 minutes is recommended, depending on the desired strength.
Sencha - another type of green tea from Uji Prefecture. It is perfect for eating with sushi and rolls.
Sencha (Sentya), which appeared at the beginning of the XVII century, is the most common variety of green tea in Japan: it represents more than 80% of the total production of the country. There are many varieties of sencha, from very ordinary to the most refined, the best of which are collected from the end of April to the middle of May. This tea, whose thin and flat leaves resemble pine needles, gives a drink with a vegetable iodine character.
